Oyster Power House

A region once beset  by dwindling wild oyster populations, the Southeastern U.S. is seeing a resurgence as growers increasingly adapt aquaculture practices that are both restoring the region’s ecosystems and turning out some first-rate product. “I think you’ll start seeing Southeastern oysters on menus across the country within the next five years,” says Bob Doran, president of St. Jude Farms, Green Pond, South Carolina. “The  Southeast is going to grow into a powerhouse for oysters. And fast.”
